Savoury taralli are made in the Puglia and Campania regions in Southern Italy following two separate traditions. It is said that the Neapolitan bread-makers, not wanting to throw away any odds and ends of leavened dough from making bread, started to make salted, twisted rings with the addition of lard and pepper at the end of the 1700s. In the 19th century they were enriched with almonds. In Puglia, however, legend has it that a mother, having nothing to feed her children and having just a few ingredients in the pantry, prepared small rings of dough, simply kneading flour, oil and a pinch of salt: she closed them with a small final knot and baked them in the oven. This recipe is for a modern version from Puglia.

Grissini – or breadsticks – were created in northern Italy, in Turin. The name of these typical crispy breadsticks derives from the word "gherssa", a traditional bread that is prepared in the Piedmont region, similar to a baguette. Antonio Brunero, the baker of the House of Savoy, invented them on the advice of the royal doctor, so that young Vittorio Amedeo II could eat bread. The child, in poor health, could not digest the crumb. So Brunero baked a new type of bread, without any crumb, which was tasty and nutritious.

Recipe Of The Month - November

The world is full of delicious sandwiches, filled with local specialities such as cheese or cured meat or fish, even a simple omelette or hard boiled egg, and sometimes a tuft of arugula or leaf of basil. The breads are all delicious whether thick slabs of rustic breads, bread rolls, or squares of focaccia.

Then there are tramezzini: delicate sandwiches said to have originated in Venice, based on this fragrant, soft, tender-crumbed bread. Sliced thin, crusts cut off, sliced into triangle halves, tramezzini are the most elegant of Italian sandwiches.
They are perfect for picnics: filled with chicken salad mixed with homemade mayonnaise (why not make a Coronation chicken filling, with curry spices and dried fruit?). Tuna with olives; sliced cucumbers, cream cheese and fresh herbs? Or a Bombay Sandwich: the buttered slices spread with chutney and filled with sliced cucumber, tomatoes, beetroot, raw onions, and/or potatoes.
