Tomato, Ricotta and Mozzarella Calzone

Ricotta and mozzarella make a delicious and luxurious filling for this tomato-topped calzone. This is best made in individual portions, one calzone each.

INGREDIENTS

1 loaf of pizza dough (see recipes)
2-3 tbsp diced canned tomatoes
120g ricotta cheese
About 200-250g mozzarella, diced
A little grated Parmesan (optional)

METHOD

Stretch out the pizza dough on the work surface. Add a drizzle of extra virgin olive oil and place some fresh basil in the centre. Mix the ricotta and mozzarella or other meltable cheese and place in the centre.

Fold over and seal the edges. Top with the tomatoes and a little grated Parmesan if desired.

Bake at 225°C for 15-20 minutes, or until golden brown.
