Spiced Apple Cookies

INGREDIENTS

250g Italian type 00 flour
100g brown sugar (light or dark)
100g unsalted butter, softened
1 large egg
1 medium apple, peeled and finely chopped or grated (about 150g)
1 tsp ground cinnamon
½ tsp ground cardamom
¼ tsp ground nutmeg
1 tsp baking powder
A pinch of salt
1 tbsp milk (if needed, to adjust dough consistency)

METHOD

In a large bowl, sift together the flour, baking powder, spices, and salt. In a separate bowl, beat the softened butter and brown sugar until creamy and fluffy. Add the egg and mix until well combined. Gradually add the dry ingredients to the wet mixture, mixing gently until a dough forms. If the dough feels too stiff, add 1 tablespoon of milk to loosen it.

Fold in the finely chopped or grated apple. Wrap the dough in cling film and refrigerate for at least 30 minutes to make it easier to handle.

Preheat the oven to 180°C.

Roll out the dough on a floured surface to about 0.5 cm thickness. Use cookie cutters to shape into rounds or your preferred shapes. Place on a baking sheet lined with baking paper.

Bake for 12-15 minutes, or until the edges are lightly golden.

Transfer to a wire rack and allow to cool completely. Sprinkle with cinnamon sugar or powdered sugar if desired.

Optional finishing touch: Sprinkle with a little cinnamon sugar or powdered sugar once cooled for extra flavour and visual appeal.
