Tomato & Fresh Mozzarella Crostini

Fresh, simple and Italian-inspired, these Tomato & Fresh Mozzarella Crostini feature crisp toasted bread topped with ripe tomatoes, creamy mozzarella and basil. They make a classic European antipasto or light starter that highlights the natural flavours of quality ingredients.

INGREDIENTS

1 small baguette made with 00 flour
4-5 cherry tomatoes (diced)
150 g fresh mozzarella, sliced or diced
Extra virgin olive oil
Fresh basil
Salt and pepper, to taste

METHOD

Slice the baguette into 1-1.5 cm thick pieces and place them on a baking tray. Brush lightly with olive oil and toast in a preheated oven at 220°C for about 8-10 minutes, or until crisp and lightly golden.

Remove from the oven and allow to cool slightly.

Top each slice with fresh mozzarella and diced tomatoes. Season with salt and pepper. Garnish with fresh basil leaves and drizzle with a little olive oil.

Serve fresh.
